Kebab masala is a special blend of spices which are used to marinate lamb, chicken or fish before preparing kebabs. The usual ingredients are bayleaf, ginger root, cinnamon, cloves, peppercorn, coriander seeds, fennel and chilli powder. It can be prepared at home or bought from a store.Use a food processor or blender to grind together the bay leaf, ginger, cinnamon, coriander seeds, salt, fennel seeds and chili powder. Combine this spice mix with the garam masala, lemon juice, turmeric and oil in a large bowl and the kebab masala is ready to be sprinkled over lamb or chicken before grilling or during marinating.
Make a paste of Dhruti Kabab powder by adding 2 Egg and 30gm of Dhruti Ginger Garlic Paste. Apply the paste overdressed 1Kg chicken pieces. Keep aside for 20 minutes for soaking. Fry the soaked chicken pieces in well-heated oil. Now chicken kabab is ready to serve.
Note: Do Not mix water, chilli and salt.
Kebab masala is also used to prepare seekh kababs, boti kababs and other kababs like reshmi kabab, vegetable kabab, hara bhara kabab and are at times.
